The Honey

Two harvests, three characters

Spring blossom, spring blossom crème and summer harvest – carefully harvested and filled by hand.

Golden honey flowing from the extractor

From hive to jar

Short distances, unhurried work.

We harvest only what the colonies can spare, and extract cold. Then it is strained, left to rest, skimmed – and only then filled. No heating and no detour through wholesale.

Every jar carries the signature of its location: what flowers in the Pestalozzi gardens tastes different from what grows at the edge of the woods in Höngg.

The varieties

Three that differ distinctly from one another.

01

Spring blossom

Harvested in May

The aromatic first harvest: light, floral, many-layered. Acacia, horse chestnut and lime blossom set the tone. Goes with young cheese, yoghurt and white bread.

02

Spring blossom crème

Harvested in May

The spring blossom, stirred until it melts softly instead of running. Spreads easily on breakfast toast – and never sets hard again.

03

Summer harvest

Harvested end of June

Darker and stronger, with a malty finish. The full taste of a Zurich summer – excellent with hard cheese, game and in dark sauces.
